The Amazing "Eat More Veggies" Bean Salad!



Beans beans the magical fruit, the more you eat the more you toot...Well, tooting aside, I love this salad! It's a really easy way to increase your vegetable intake in a most delicious way, if I say so myself. Perfect for lunches on the go to take to school or work, a great side-dish at a summer BBQ, or as a main course for a light meal.

Ingredients:
2 cans of beans in water (red or white Kidney, chick peas, lentils, borlotti, up to you!)
1 large bell pepper
1 apple
2-3 celery stalks
2 tomatoes
fresh garden herbs (mint or parsley works well)
1/2 to 1 whole cucubmber
100g Feta cheese
1 whole onion (red, white, or several spring onions)

Dressing:
a good splash of extra virgin olive oil
2 Tablespoons apple vinegar
salt & pepper
1-2 Teaspoons Tabasco sauce
2-3 Tablespoons plain white yogurt
dash of lemon juice

Chop all the vegetables, fruit and herbs and put in a large bowl, add the lemon juice to prevent the apple from oxidizing. Remove the seeds from the cucmber before chopping. Rinse the beans with water in a collander and add on top. Crumble Feta cheese on top. Stir dressing in directly and mix well, let the salad sit for maybe 10 minutes to marinate. Adjust with salt, pepper and Tabasco sauce. This will keep in the fridge for about two to three days. I hope you enjoy! Watch my Youtube video for step my step instructions.

  7. Made this for my mam,dad,aunt and uncle when we were all on holiday's, took some time to convince them when I went shopping for the ingredients , but they ate it all they loved it was so tasty its going to be a regular salad in my house from now on .

  8. This salad was delicious!! I used canned red kidney beans and chick peas which seemed to be a nice combo. Also, I LOVE the apple, I found myself looking forward to each bite hoping there would be that crunchy sweetness in it, I was totally surprised that I liked it as I am not normally a sweet/savory kinda gal.     I've been meaning to try this one out since you posted it and finally got around to it tonight. It's so yummy! I made a couple of changes, daikon radish instead of celery (as it's what I had) and only 1 can of pinto beans since I'm not a huge fan of beans. I also used balsamic vinegar and greek yogurt as, again, it's what I had. The combination of apple and feta are such a perfect touch. Thanks for the recipe, I will definitely be making this again!

  11. I made this a couple of times when I first watched this video. Recently my son-in-law requested I make it again for my daughter's 30th Birthday party we are having. I was flattered that he even remembered I made it. My mom loved it too. I can't wait to make it again for our family celebration.

  14. I made this salad and I'm really enjoying it! I used an orange pepper and a red pepper. For my beans I used dark red kidney beans and black beans.

    It tastes delicious even without olive oil, apple vinegar or yogurt. But I have those ingredients so I might add them later.

    Thanks for the tips to rinse the beans (I used canned beans too) and scoop out the cucumber seeds.

    By the way for anyone who wants to look for borlotti beans, they're also called cranberry beans.
