These cookies are soooo good! I've made them twice now in December and each time they came out perfectly. They are fairly easy to make and are a perfect combination of chocolate and mint.
Ingredients
(Makes about 24 - 30 cookies)
- 3/4 cup butter (170g)
- 1 1/2 cups brown sugar (220g) (read my note below)
- 2 tablespoons water (30ml)
- 2 cups semisweet chocolate chips/baking chocolate (335g)
- 2 eggs
- 2 1/2 cups all-purpose flour (310g)
- 1 1/4 teaspoons baking soda (6g)
- 1/2 teaspoon salt (3g)
- 3 (4.5 ounce) packages chocolate covered thin mints such as After Eights (378g)
Directions
- In a saucepan over medium heat, cook the sugar, butter and water, stirring occasionally until melted. Remove from heat, stir in the chocolate chips until melted and set aside to cool for 10 minutes.
- Pour the chocolate mixture into a large bowl, and beat in the eggs, one at a time. Combine the flour, baking soda and salt, stir into the chocolate mixture. Cover and refrigerate dough for at least 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll cookie dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, be careful not to overbake. When cookies come out of the oven, Press one mint wafer into the top of each cookie and let sit for 1 minute. When the mint is softened, swirl with the back of a spoon or toothpick to make a pattern with the green filling of the mint wafer
Amazing! I'll be copying this tonight! Thanks for all you do to spread unique beauty in the world! I follow your makeup tutorials on YouTube.
ReplyDeletethanks my dear for the delicious cookies
ReplyDeleteThese look so delicious! Thanks for the recipe I will try it out..
ReplyDeleteIs there a supply of brown sugar somewhere in Switzerland that I've been overlooking? Or do you use a similar method to mine of mixing molasses and sugar?
ReplyDeleteMy bad. I noticed in the video that you use raw sugar and not brown sugar. My hunt for brown sugar will have to continue I guess. You should try adding molasses to the raw sugar and creating your own brown sugar it will really change up the taste.
ReplyDeletethose look so good!! i am going to try and make them for christmas!

ReplyDeleteI'm doing them right now :D (I made a small change, and used only 200gr of semi-sweet chocolate, hope it will not ruin the recipe).
My christmas to you and everyone!!!

This is because basically wanted to know if it was yours to follow on Tumblr since I have account there.
Allas hopefully come to understand something of what I have written.
Here is the link of the account to see what I mean.
